Preety’s Chickpea Salad Recipe

“A chickpea salad garnished with lemons. Warming the garlic and olive oil is optional, but it adds a nice flavor!”
INGREDIENTS (Nutrition)
* 1 clove garlic, minced
* 2 teaspoons olive oil
* 1 (16 ounce) can garbanzo beans (chickpeas), drained and rinsed
* 1 tomato, chopped
* 1/3 onion, chopped
* 1 teaspoon cider vinegar (optional)
* 1/2 teaspoon salt, or to taste
* 1 pinch ground black pepper
* 1/2 lemon, sliced
DIRECTIONS
1. Mix the garlic and olive oil in a small microwave-safe bowl. Cook 15 seconds in the microwave on High, or just until warm.
2. In a large bowl, toss together the garlic and olive oil, garbanzo beans, tomato, onion, and vinegar. Season with salt and pepper, and garnish with lemon slices. Cover and chill until serving.
