Lebanese Chickpea Appetizer (Hummus Habb)

This is something new to try apart from your old school hummus recipe. The flavors are quite distinct from that of Arab version.

INGREDIENTS

* 2 cups chickpeas – cooked or canned
* 1/4 cup olive oil
* 1/4 cup fresh lemon juice
* 6 cloves garlic – crushed
* 1 teaspoon salt – to taste
* 2 tablespoons scallions – finely chopped
* 2 tablespoons fresh cilantro – finely chopped
* 1 tablespoon mint – finely chopped

DIRECTIONS

  • Combine all the ingredients well but do not add the mint yet. Place it in the refrigerator for an hour.
  • Serve and use mint as garnish.
